Specific Job Related Duties **
Prepares metabolic-controlled diets for complex inpatient and outpatient research studies and provides dietary support to research investigators by being involved with all aspects of preparation and serving of meals to research subjects.
ESSENTIAL JOB FUNCTIONS:
Prepares special meals and beverages per protocol specifications, using basic recipe calculations and knowledge of various diet types.
Weighs and measures food accurately for research diets, avoiding reportable deviations.
Portions and arranges food on serving trays.
Distributes appropriate research diets to study subjects.
Interacts with research subjects regarding dietary preferences and notifies supervisor of any dietary concerns.
Logs vital research information into the electronic Case Report Forms (eCRF) database to capture meals consumed by subjects.
Ensures that all logs are kept current, including but not limited to refrigerator temperature logs and food weigh-back logs.
Coordinates with the staff in the main hospital kitchen when ordering regular meal trays and other supplies.
Assists with inventory maintenance and ordering research kitchen supplies.
Cleans and sanitizes research kitchen equipment, utensils, and work areas daily.
Stores food in designated containers and storage areas to prevent spoilage.
Adheres to internal controls and reporting structure.
